Monday Meal Planning: Recovering from Surgery

Hello and welcome! Thanks so much for stopping by!

A little more than a month ago I had a medical issue come up... luckily I was able to see a great doctor and am now recovering nicely. What a crazy month though, as my husband took over the cooking and other household duties. He did a great job! We kept it simple and healthy. Now that I'm back in the kitchen, I'm still not 100% so I'm still planning on keeping things easy -- nothing fancy on the menu this week. :) Over the past month we were very thankful for our garden, which has provided a constant stream of fresh veggies -- one less thing to worry about shopping for! Here's my plan for the week:

Sunday: Bottom Round Roast Crockpot style with steamed broccoli and parsley roasted potatoes from the garden

Monday: Spinach, Mushroom and Black bean enchiladas, based on the burrito recipe on this page

Tuesday: Taco Soup, served on tortilla strips and shredded cheddar cheese and topped with chopped fresh tomatoes.

Wednesday: Eve's Chicken Quarters (I'll be using a whole cut up chicken instead)

Thursday: Grill night

Friday: Homemade Pizza night

Saturday: Leftover night!

  1. Keeping it simple is a good idea when you aren't feeling your best. Your menu still looks good. Hope you have a quick recovery!
