Monday Meal Planning: Thanksgiving Week 2011

Just a few notes about last week: I tried two cookie recipes. I haven't written about them yet, but the Gingerbread Butterscotch Cookies were amazingly good. I also made Chocolate Rolo Cookies, which were hugely successful. I will definitely be making both again! I also posted about my Roasted Squash and Tomato pasta, a family favorite. My teens ate it (all!) up!

Here in the U.S., this Thursday we will be celebrating a wonderful holiday -- Thanksgiving! We'll be joining with my husband's family, with everyone bringing their tasty sweet and savory dishes to share.  I'm thankful and truly blessed to count them as my family. As other family members will be making the turkey and sweet potatoes, this year I'll be making some of my family's favorites plus a couple new (or new twists to old recipes) for this week's holiday.

Here's my family's menu for this week (and my cooking plan for Thursday!):

Sunday: Homemade Tomato Soup and Sandwiches

Monday: Pulled Pork (from the freezer), salad
Make Ahead for Thanksgiving: Make-ahead Mashed Potatoes

Tuesday: Leftovers
Make Ahead for Thanksgiving: Make french bread and prepare veggies for stuffing and refrigerate

Wednesday: Turkey and Spinach Enchiladas
Make Ahead for Thanksgiving: Pumpkin Cheesecake

Thursday: Thanksgiving! We'll be bringing:
Friday: This should be our Homemade pizza night... going to leave this open.. depending on if we have T-day leftovers!

Saturday: Turkey, Roasted Acorn Squash, and Salad (Cooking the first of our small "family" turkeys!)
