Father's Day Menu Plan

With Father's Day just around the corner, and our plans still not nailed down yet, at this point I've come up with a few possibilities for a wonderful dinner, even if I'm not yet sure where we will be spending the day! Here are the delicious delights I'm planning, including a wonderful shrimp salad and a tasty orange cake using oranges from our tree!

As usual when I do any menu planning, I take a look at what we've got on hand. I was especially looking at our freezer, as I've got some special things in there I've been saving, and now is the time to use them!

First up, HAM. Out will come the great ham we bought on sale at Easter time. This ham is already cooked, so it's just a matter of deciding if we'll be having sandwiches or something more extravagant. If we decide to go more formal, I'll cook/warm it in the crockpot (won't heat up the house, plus it's more portable!) with a can of pineapple with juice, and coated with brown sugar, plus about a cup of water to keep it moist.

Second, Shrimp and Black Bean Salad. I've had about a pound of shrimp in the freezer for a bit... and I just found this great recipe that I am planning to use as an inspiration... served with lettuce from our garden.

Third, home made whole wheat rolls.

Next, veggies will depend where we are. At home, I'm thinking veggie kabobs (onion, potato, sweet potato, broccoli, peppers all on hand).

Finally, I haven't decided if I'll go with Mocha Cake or Orange Cake (ingredients on hand for both... probably go for the second one since we still have a few straggler oranges on our tree!)

Ok, now I'm hungry!
